Design for a new kiln at Beamish & Crawford’s brewery, c.1870 Kilns were used in both brewing and distilling to halt the germination process in malted barley. Barley was first soaked in water to begin germination and was then spread out under carefully controlled conditions. When ready, it was dried in kilns and the resultant malt was ready for further processing. (CCCA U18 Drawing No.296 Beamish & Crawford)
